As a vegetarian, nuts are a huge staple in my everyday diet. They provide protein and nutrients in a diet that lacks meat. I’ve discovered that in certain regions of the world, the quality of nuts, specifically macadamia nuts and pistachios, is unmatched. I was fortunate enough to spend some time living in Hawaii, where we not only have amazing fruits and coffee but also unreal locally grown macadamia nuts. During this same time period, I traveled to Sicily, Italy, and tried their famous pistachios. What makes these specific nuts in these particular regions taste so good is quite unique and interesting.
If you’re not familiar with the geographical makeup of Hawaii or Sicily, what they share in common is having an active volcano. Macadamia nuts, which are primarily grown on the Big Island of Hawaii, are cultivated on or near the volcanoes Mauna Kea and Mauna Loa. The rich volcanic soil in these regions provides the perfect conditions for growing high-quality macadamia nuts. Similarly, Sicily’s fertile volcanic landscapes around Mount Etna support a variety of unique agricultural products, such as blood oranges and pistachios.

Similarly, in Sicily, the Bronte pistachios are grown in the region surrounding Mount Etna.

Now, you may be wondering what a volcano and the quality of nuts have to do with each other. Volcanic soil and the areas near volcanoes often have very rich and mineral-dense properties. This type of soil is perfect for growing a variety of produce, and in these regions, it’s nuts that thrive. The soil around Mount Etna in Sicily and on the Big Island of Hawaii is incredibly fertile, allowing macadamia nuts and pistachios to flourish and develop their exceptional flavor. You might question how different nuts could taste from one region to another, but I can promise you that the nuts in these regions are far superior to any macadamia nuts or pistachios I’ve ever tasted elsewhere. This difference is largely due to the unique combination of volcanic minerals and the specific climate conditions found in these areas. If you ever have the chance to try them straight from their source, you’ll immediately notice the rich, buttery flavor that sets them apart.
But what truly elevates these nuts is how they’re incorporated into local dishes.
On the Big Island of Hawaii and other Hawaiian islands, one of the most common dishes you’ll find is locally caught fish crusted in macadamia nuts. This dish is always amazing, whether it’s made with ono or mahi-mahi, offering a perfect balance of crunchy nuttiness and the fresh, tender taste of the ocean. You’ll also discover fantastic desserts that incorporate macadamia nuts, such as macadamia nut ice cream or the famous Mauna Loa chocolates—chocolate-covered macadamia nuts that make for an irresistible treat. One of my personal favorites is macadamia nut coffee. The Big Island boasts some of the best coffee in the world, and when Hawaiian roast coffee is mixed with local macadamia nut flavors, it’s simply unbeatable. Many cafés even use macadamia nut syrups or macadamia nut milk to add delicious flavor to their rich coffees. These ingredients are a celebration of Hawaii’s culinary creativity and its connection to the land, where every bite or sip feels like a taste of paradise. Whether you’re indulging in a gourmet dinner or enjoying a simple cup of coffee, the unique flavors of Hawaii leave a lasting impression.


In the Sicily region, pistachios are everywhere, and their vibrant green hue is as much a feast for the eyes as their flavor is for the palate. You’ll often find them mixed into sauces, like the famous pesto sauce, where they lend a rich, nutty twist to the classic recipe. Pistachios also feature prominently in pasta dishes, such as ravioli with pistachio and cheese sauce, creating a creamy, indulgent meal that feels quintessentially Sicilian. One of my favorite uses of pistachios in Sicily is in desserts—think tiramisu with pistachios or cannolis filled with pistachio cream, where the nuts add both a luxurious texture and an earthy sweetness. And of course, you can’t miss the pistachio-flavored gelato, a staple in any Italian gelateria, known for its creamy consistency and intense flavor. Beyond traditional dishes, pistachios are even incorporated into modern Sicilian street food, like pistachio-crusted arancini, making every bite a celebration of this beloved nut. Whether savory or sweet, pistachios are a testament to the region’s rich culinary heritage and its ability to turn simple ingredients into extraordinary experiences.


As I’ve mentioned in previous articles, trying new foods is one of the greatest joys of travel. No matter where you go, you’ll always have the opportunity to dive into a local delicacy or discover a new way of cooking and preparing foods. Around the world, we practice so many different methods of cultivation, preparation, and cooking. In places like Italy and Spain, there’s such pride in the social aspect of food, whether it’s their lively farmers’ markets or their love of sharing dinner with friends and family. Sampling foods, wines, and other delicious treats from around the world is an experience like no other.
What’s particularly fascinating is finding two completely different nuts in places halfway around the world from each other, both benefiting from the same type of soil and cultivation practices to produce some of the best macadamia nuts and pistachios in the world. It’s a reminder of how nature’s bounty is shaped by the environment, with volcanic soil playing a key role in enhancing flavor and quality.
